ECUADORIAN FOOD PREPARING CEVICHE OF SHRIMP On the Ecuadorian coast there are traditional strong dishes prepared with fish, seafood and plantains, while in the Ecuadorian highlands you can find main dishes based on beef, pork and chicken.  Ingredients: - 1 Kg of shrimp boiled for 5 minutes with a pinch of salt and onion - 2 medium Paiteña onions, cut into strips - Juice of 10 sour oranges - Juice of 4 lemons - 6 grated "kidney" tomatoes - 1/2 cup of sunflower oil - 1 twig of culantro - Salt and pepper. Elaboration: Pick the onions (put them in abundant salt for 20 minutes, wash them and drain them in cold water). Mix the orange juice with the lemon juice, the grated tomatoes and the oil. Increase the salt and pepper mixture. Add the pickled onions and the coriander. Finally, add the shrimp a moment before serving, to avoid damaging them with lemon acid and oranges.
